Maclean’s Highland Bakery Limited, a family business based in Forres, is looking for an NPD Food Technologist to deliver two exciting new product development projects over a 12 month period. This placement will involve ingredient formulation, testing, test baking and sensory analysis panel testing.

This placement is part of the Knowledge Exchange Placement Programme  (KEPP) http://www.hie.co.uk/business-support/scotgrad-highlands-and-islands/knowledge-exchange-placement-programme.html The successful candidate will help facilitate knowledge exchange between Maclean’s Highland Bakery Limited (MHB) and Queen Margaret’s University (QMU) in Edinburgh, to develop two new pre-determined  commercially sensitive product lines, and ensure that these are market ready. The successful candidate will be based in Forres but will be expected to undertake travel to QMU on an ad hoc basis.

This position is part funded by Highlands and Islands Enterprise, the European Regional Development Fund and the Scottish Funding Council.

Placement Objectives

To develop two new pre-determined product lines.  

Role Description

The successful candidate will work closely with both MHB and QMU to deliver the following specific tasks:

  • Induction training at QMU
  • Formulation, ingredient testing and test baking
  • Nutritional calculations as well as lab analysis
  • Review test results/trials
  • Work with QMU to undertake several food/consumer sensory analysis panels
  • Source project consumables

Qualifications

Open to all candidates with at least an HNC in the relevant subject area.

  • Food Technology, Food Safety Systems or New Food Product Development qualification
  • Knowledge of food safety systems and working in the food industry
  • Excellent communications skills

  • Ability to assume responsibility for project management and completion

Maclean’s Highland Bakery (MHB) produces high quality bakery products at a modern bakery in Forres, centrally located between the Highland, Speyside and Grampian regions of Scotland.

Our products are supplied to a range of customers, in Scotland, across the UK and also internationally. The three main markets are:

  • Scotland – MHB has five retail bakery shops, two of which are Coffee Shops. We have three shops in Forres, one in Grantown and one in Lossiemouth. We also wholesale products in Scotland to Tesco, Co-Op, NHS, convenience stores and hotels.
  • UK – MHB supply a number of the large supermarkets including Tesco and the Co-Op using our own brand and private label.
  • International – MHB currently export regularly to the USA, China, Canada, Denmark and France. This includes both our own brand and private label.
